- 1 LB Ground Turkey You can also use ground chicken or beef
- 1 tbsp Avocado oil (or oil of your choosing)
- 1 Medium Sweet Potato diced Any kind will do
- 1 small onion diced
- 1 small container of mushrooms, sliced Optional.
- 1 small zucchini, diced optional
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp pepper optional
- 2 tbsp Coconut Aminos
Instructions
Brown the Meat: Heat avocado oil in a large skillet over medium-high heat. Add your choice of ground meat (turkey, chicken, or beef), breaking it up as it cooks until browned and fully cooked through. While the meat is browning, add in the onion and sweet potato Into same skillet. They can cook in the oil and use up the fat from the meat and it will add extra flavor and one less pan to clean. Season with garlic powder, sea salt, and black pepper. Cook for 8–10 minutes, stirring occasionally, until sweet potatoes begin to soften.Add Vegetables: Stir in the diced zucchini and sliced mushrooms( If you choose to add them. Cook uncovered for another 5–7 minutes until the veggies are tender and any moisture from the mushrooms evaporates. Pour the 2 tbsp of coconut aminos over everything, tossing well to combine and coat for 1–2 minutes until warm and fragrant. You may want more aminos but start with 2 tablespoons. Serve: Enjoy warm as a high-protein breakfast, or top with sliced avocado.
