
Shepherd’s Pie with Mashed Cauliflower
All the comforts of a warm meal without the added carbs

- Preheat oven to 350 degrees
- Put the cauliflower in a medium sized saucepan, cover with enough water to cover the cauliflower and bring to a boil. Let the cauliflower boil until they are fork tender, about 20 minutes.
- While the cauliflower is cooking, heat the oil in a large skillet over medium heat. Add the onions and cook until translucent. Then add the garlic and cook 1 -2 minutes and then add the ground turkey, and cook until browned.
- Add the carrots, celery, beets, mushrooms, seasonings, and aminos. Continue to cook for a few minutes until everything is cooked through. Remove from heat.
- Drain the cauliflower into a colander and allow to drain for a few minutes. Mash the cauliflower with a 1/2 tablespoon of oil or butter (if you prefer) until a consistency of mashed potatoes. I sometimes add some garlic powder, salt and pepper as well to just add more flavor.
- Place the meat and veg mixture into a 9×13 baking dish, then add the mashed cauliflower on top, spread evenly across the top
- Place in the oven and bake 30 minutes.
