Shepherd’s Pie with Mashed Cauliflower

All the comforts of a warm meal without the added carbs

Ingredients
  

  • 1 head Cauliflower (chopped into chunks)
  • 2.5 Tbsp avocado oil
  • 1 yellow onion diced
  • 4 garlic cloves minced fine
  • 1 LB Ground Turkey You can also use ground beef
  • 3 Cups Mushrooms sliced
  • 2 carrots peel and diced
  • 2 stalks Celery diced
  • 1 beet diced You can omit if you want
  • 1 tbsp Italian seasoning
  • 1/2 tbsp rosemary seasoning
  • 1 TBSP coconut aminos
  • 1/4 tsp salt
  • 1/4 tsp pepper

Equipment

  • 1 Skillet to brown the meat and vegetables
  • 1 9×13 baking dish

Method
 

  1. Preheat oven to 350 degrees
  2. Put the cauliflower in a medium sized saucepan, cover with enough water to cover the cauliflower and bring to a boil. Let the cauliflower boil until they are fork tender, about 20 minutes.
  3. While the cauliflower is cooking, heat the oil in a large skillet over medium heat. Add the onions and cook until translucent. Then add the garlic and cook 1 -2 minutes and then add the ground turkey, and cook until browned.
  4. Add the carrots, celery, beets, mushrooms, seasonings, and aminos. Continue to cook for a few minutes until everything is cooked through. Remove from heat.
  5. Drain the cauliflower into a colander and allow to drain for a few minutes. Mash the cauliflower with a 1/2 tablespoon of oil or butter (if you prefer) until a consistency of mashed potatoes. I sometimes add some garlic powder, salt and pepper as well to just add more flavor.
  6. Place the meat and veg mixture into a 9×13 baking dish, then add the mashed cauliflower on top, spread evenly across the top
  7. Place in the oven and bake 30 minutes.
